What makes churrasco special? Also known as Brazilian barbecue, 19^th century horseback riders or gauchos who lived in rural areas had easy access to cattle.  They would roast the beef on skewers over an open fire which brought out the natural flavor of the mouthwatering meat.

Churrasco is traditionally enjoyed with a big number of people, gauchos would go around the tables where their friends and family are gathered, serving unlimited slabs of beef from the skewers.  This style of serving is called rodizio.

Nowadays, restaurant staff continuously go around the tables with their skewers and serve the diners when they see the green marker which means the guest wants more servings.  Once the marker is flipped on the red side, this is an indicator that the guest has already had his/her fill. A variety of sauces like chimichurri, peri-peri and salsa verde together with side dishes help enhance the taste of the meats.
